totally green funky “caesar” salad

It’s been a minute and a half and my friend Sophie reminded me to share a salad that i made and then fell in love with, so I then ate it A LOT. I’ve been living alone on-and-off since my Justin is away filming a Good Tv Show, so I have been eating weirdly & not really developing recipes. I have been watching a lot of good movies though and if you love food like me (love… what a complicated way to look at it) I seriously suggest watching TAMPOPO.

ANYWAY this one is for the chickies who want a little bit of a creamy salad thing but also want to feel cool as hell. Originally posted on the fantastic IG account salad_daze.

INGREDIENTS

For the Salad Base

  • 1/2 Cup of chopped up brussel sprouts (raw)

  • 2 bok choy (raw), chopped

  • 1/2 a small zucchini (raw), sliced & cut in half

  • 1 small cucumber, sliced & cut in half

  • 4-5 stalks of kale, torn

  • 1 cup fresh cilantro leaves and stalks, torn

  • 1 cup of fresh thai basil leaves, torn

  • Hefty sprinkle of toasted sesame seeds

  • Salt & Pep

For the Faux Caesar Dressing

  • 1 Tbsp mayo (regular or vegan)

  • 1/2 Tbsp capers (thanks Eris via Arielle for the tip!)

  • 1/2 Tbsp of Dijon mustard (any type would work though)

  • 2 cloves raw garlic, minced

  • 1 Tbsp grated parmesean OR nutritional yeast

  • 1 Tbsp olive oil

  • Juice from 1 lime

  • Salt & Pep

STEPS

  1. Combine salad base ingredients in a big big bowl

  2. Combine dressing in a small/medium bowl and whisk until nice & mixed

  3. Toss the dressing into the big big bowl and cover every inch of green with dressing

  4. Top with toppings of choice.. may I suggest: crispy chickpeas, poached egg, fried tofu, cubes of avocado, vegan chicken nuggets, and/or fresh breadcrumbs
