quick pickle rick
this is from a time in college when we ended up at bar that was having a rick & morty pop-up and we had no idea
hehehe. Get it? I love making quick pickles and then eating too many and being like, “ouch.” These go great with a a big honkin’ hummus sandwich
INGREDIENTS
1 Shallot, thinly sliced
2 English cucumbers OR 4 Persian cucumbers, sliced into thick coins
3 Tbsps of Salt
1 Tbsp of Sugar
1/2 Tbsp of Ground Black Pepper
1/2 Cup of Red Wine Vinegar
2 Cloves of Garlic, smushed/crushed/bashed
STEPS
Combine all ingredients & stir well and put put in a container that seals shut nicely
Marinate in the fridge for 2 days before eating!
